Quiche recipe with ham, leek and cheese with Thermomix

Ingredients to make Quiche with ham, leek and cheese with Thermomix:

Mass (basis):

  • 200 grams of flour
  • 100 grams of butter
  • 100 grams of Danone Quark
  • 1 teaspoon Royal yeast
  • 1 teaspoon salt

Filling:

  • 200 grams of Gouda cheese
  • 200 grams of Serrano ham
  • 400 grams of Leek
  • 250 milliliters of water
  • 2½ cups of cream or milk cream
  • 4 Eggs
  • 1 pinch of pepper
  • 1 pinch of salt
  • 1 pinch of Nutmeg

How to make Ham, Leek and Cheese Quiche with Thermomix:

We start the recipe for leek quiche with Thermomix by preparing the base dough. To do this, we cut the butter into pieces and put it in the bowl of the machine along with the rest of the ingredients (flour, Quark, yeast and salt). We program the Thermomix at spike speed for 2 minutes to make a smooth and homogeneous dough.

We spread the quiche dough on the work surface and stretch it with the help of a rolling pin. Then, we cover the base of the mold with the dough, which should be about 26 cm in diameter so that the leek quiche is enough for all the guests.

Trick: Preheat the oven to 180-200 ºC.

When the oven is hot, prick the base of the dough and place a weight on it (chickpeas, lentils…) to prevent it from increasing in volume. Then we bake it for 10-15 minutes, no more. To make the filling for the leek and ham quiche, place the cheese in the Thermomix glass and chop it for 5 seconds at speed 8. Remove it and set it aside.

We do the same with the Serrano ham, we chop it with the Thermomix for 5 seconds at speed 8 and reserve it. Then, we clean the leeks, cut them into slices and place them in the basket.

We add water in the glass of the Thermomix, place the basket with the leek and program the machine for 15 minutes, at speed 1 and 100 ºC. After the time, we drain the leek and place it on the quiche dough.

To continue preparing the leek quiche with Thermomix, pour the cream, eggs, pepper, salt, nutmeg, cheese and Serrano ham into the bowl of the machine. Mix for 5 seconds at speed 4. Then, place the filling on the leeks and bake the quiche at 170-190 ºC, for approximately 50 minutes. Depending on the type of oven, it may take more or less, so we must be aware. Clever! We serve the leek, ham and cheese quiche with Thermomix as a starter in a family meal or with friends. And if we want to make a more complete appetizer, we can prepare some delicious sausage croquettes with Thermomix, and prepare a succulent dessert, such as a brownie with Thermomix.
