Quiche recipe with caramelized onions, blue cheese and walnuts

Savory tarts are an ideal alternative to solve dinners or meals away from home since they can be prepared in advance and heated with a microwave blow before eating without losing flavor or texture. In addition, homemade quiches admit almost any ingredient that we can imagine and the result is in most cases spectacular.

That’s why we learn how to prepare a quiche with gorgonzola cheese (spicy), walnuts and onion, a spectacular combination of flavors and textures!

Ingredients to make Quiche with caramelized onions, blue cheese and walnuts:

• 1 sheet of short crust pastry

• 4 medium onions

• 200 grams of spicy gorgonzola cheese

• 125 grams of Mozzarella

• 200 milliliters of cream to cook

• 1 teaspoon Bovril (meat concentrate)

• 1 pinch of ground black pepper

• 100 grams of peeled walnuts

• 1 tablespoon of extra virgin olive oil

• 3 eggs

How to make Caramelized Onions, Blue Cheese, and Walnut Quiche:

We started making this blue cheese and walnut quiche by peeling and julienned the onion. Add a splash of olive oil to a large frying pan and when hot add the onion.

Fry until poached. When it begins to turn transparent, add a teaspoon of Bovril (meat concentrate) and stir well. If you don’t have Brovil you can put a cube of meat broth.

Tip: If you prefer not to notice the onion, even if it is the base of the cheese and walnut quiche, you can cut it brunoised (into small pieces)

Meanwhile, we cut the gorgonzola cheese into small pieces and reserve. When the onion is caramelized, add the cream, pepper and cheese and stir well. Let cook over low heat, stirring occasionally, so that the cheese melts.

Trick: I have used spicy gorgonzola cheese but you can put the normal one if you do not like the spicy point of it.

Remove the onion and blue cheese quiche filling from the heat and let it cool. We beat the eggs lightly, as if we were going to make an omelet, and add them to the ingredients of the blue cheese and walnuts quiche that we have in the pan (off the heat), while stirring to prevent the eggs from curdle.

We incorporate the peeled nuts (if you want you can crumble them slightly with your hands) and distribute well throughout the mixture. Cut the mozzarella into slices and reserve.

Unroll the sheet of short crust pastry and place it in our quiche pan. I advise leaving the baking paper that surrounds it to make it easier to unmold it. Pour the mixture of the onion and blue cheese quiche and arrange the slices of mozzarella on the surface.

Tip: It is essential that the mixture is cold before pouring it as it could spoil the short crust pastry.

Put the quiche with caramelized onions, blue cheese and walnuts in the oven preheated to 180ºC and bake until the salty tart is curdled. It will depend a lot on each oven but it will range between 25-35 minutes. Let cool and now we can enjoy!
