Quiche Lorraine is a traditional French dish that has little to do with what we usually understand today with this name, basically because the original recipe does not have bacon or cheese.
In any case, we like the combination of these two ingredients better and that is why we teach you how to prepare a delicious quiche Lorraine with Thermo mix. Follow this easy recipe with Thermo mix carefully and discover how to make the famous short crust pastry and the béchamel filling of this delicious dish.
Ingredients to make Quiche Lorraine with Thermo mix:
Broken mass
- 150 grams of flour
- 75 grams of cold butter
- 40 milliliters of water
- ½ teaspoon of salt
Filling
- 30 grams of Butter
- 1 tablespoon of oil
- 200 grams of Bacon in strips
- 30 grams of Cornstarch
- 250 milliliters of milk
- 150 grams of grated cheese
- 4 Eggs
- 50 milliliters of cream or evaporated milk
- 1 pinch of salt and pepper
How to make Quiche Lorraine with Thermo mix:
To make this quiche with Thermo mix we will need a mold of 26 centimeters. Gather all the ingredients and activate your kitchen robot because we will start by preparing the short crust pastry.
To do this, place all the ingredients in the glass and program 15 seconds at speed 6. You must add the ingredients in the same order that they appear on the list. Sprinkle a little flour on a flat surface and roll out the dough until very thin. Line the mold with it and prick the base with a fork. Cook in the oven for 15 minutes at 180º C. Reserve.
Tip: If the dough is too soft and you can’t knead it, wrap it in plastic wrap and put it in the fridge for about 10-15 minutes.
Now we start to make the filling for the quiche Lorraine. To do this, heat the oil and butter in the glass, programming 1 minute at speed 1 in Varoma mode.
Add the bacon and fry for 4 minutes keeping the speed at 1 and the Varoma mode. Remove the bacon from the Thermo mix glass and reserve.
Trick: To grate the cheese you can put it inside the glass with progressive speed 5-10 for 10 seconds.
In the same oil that we have in the glass, fry the flour for two minutes, maintaining the Varoma and increasing the speed to 2. Then, add the milk and pepper to finish making the béchamel sauce, programming for 5 minutes with 90º of temperature and speed in 3.
Next, add the cheese, eggs and cream, in this order and mix for 10 seconds at speed 3. In this way we already have our filling and the base of our quiche ready.
To assemble the quiche, spread the reserved bacon over the entire base and cover everything with the glass filling. Take to the oven and cook at 180º C. for about 20-25 minutes.
