Queen Potage Recipe

Ingredients to make Potage del la Reina:

  • 100 centiliter cup of oil
  • 1 large onion, finely chopped
  • 1 sliced ​​celery stalk
  • 2 baby carrots cut into small sticks
  • 250 g cooked broccoli florets
  • 150 g of cooked peas
  • 100 g of pitted green olives
  • 2 tablespoons of parsley
  • 5 liters of vegetable broth
  • Salt
  • Pepper
  • 1 large potato, cut into very small cubes

How to make Potage del la Reina:

  1. Put the oil and onion in a saucepan; fry until lightly browned and add the celery, carrots, boiling broth, salt and pepper, and simmer covered for 20 minutes slowly.
  2. Then add the potatoes and continue cooking the same way, until they are tender.
  3. Add after the peas and cauliflower in small bouquets.
  4. Heat these last ingredients and, at the time of serving, add the parsley and the olives.
