Ingredients to make Atolillo:

  • 6 cups of milk
  • 5 cups of sugar
  • 5 cup of soaked rice
  • 5 tablespoons cornstarch
  • 2 cinnamon sticks
  • Cinnamon powder

How to make Atolillo:

  1. Mix the sugar with the cornstarch.
  2. Grind the rice very fine and strain it with the milk (the rice is soaked ahead of time).
  3. Dilute with milk, sugar and cornstarch and add cinnamon sticks.
  4. Put the Guatemalan atolillo on the fire stirring constantly until it boils and thickens, around 30 minutes.
  5. Pour the atolillo into the dish or container in which you are going to serve it and sprinkle it with ground cinnamon
