Ingredients to make Atolillo:
- 6 cups of milk
- 5 cups of sugar
- 5 cup of soaked rice
- 5 tablespoons cornstarch
- 2 cinnamon sticks
- Cinnamon powder
How to make Atolillo:
- Mix the sugar with the cornstarch.
- Grind the rice very fine and strain it with the milk (the rice is soaked ahead of time).
- Dilute with milk, sugar and cornstarch and add cinnamon sticks.
- Put the Guatemalan atolillo on the fire stirring constantly until it boils and thickens, around 30 minutes.
- Pour the atolillo into the dish or container in which you are going to serve it and sprinkle it with ground cinnamon
