Purepecha Enchiladas Recipe

Ingredients to make Purepecha Enchiladas:

  • 2 breasts cooked and shredded
  • 1 potato cooked and chopped
  • 1 carrot cooked and chopped
  • 200 grams panela cheese
  • 1 cup of guajill chili sauce
  • 4 pickled jalapeño peppers
  • 1/4 cup of the vinegar from the chilies
  • 4 lettuce leaves
  • 1 onion sliced
  • 12 tortillas
  • Oil
  • Salt

How to make Purepecha Enchiladas:

Directions: Sauté the chicken along with the potato and carrot, add salt to taste. Pass the tortillas through hot oil. To each one, add a slice of panela cheese and a little of the chicken filling, and fold it in half. Mix the guajillo sauce with the vinegar from the chilies, and heat it up a bit. On a plate, put 3 hot quesadillas, bathe them with the sauce, decorate them with cheese on top, the onion rings and the lettuce leaves on the side.
