Ingredients to make pumpkin salad:
- 1/2 kg of pumpkin cut into cubes gives about 3 cm
- 1 dried chorizo pepper
- Salt
- 2 cloves of garlic
- 1/2 teaspoon cumin
- Olive oil
How to make pumpkin salad:
Boil the pumpkin with the salt and the chorizo pepper, barely covered with water (I prefer very little water and the pot covered) when the pumpkin is tender, drain it and put it in a bowl. Clean the skin of the pepper with a teaspoon put the garlic, pepper and cumin in a mortar and mash until a homogeneous paste is made, add olive oil, blending until a creamy texture is obtained. Pour over the boiled and warm or cold pumpkin, and mix well, serve cold or warm.
