Ingredients to make pumpkin salad:

  • 1/2 kg of pumpkin cut into cubes gives about 3 cm
  • 1 dried chorizo ​​pepper
  • Salt
  • 2 cloves of garlic
  • 1/2 teaspoon cumin
  • Olive oil

How to make pumpkin salad:

Boil the pumpkin with the salt and the chorizo ​​pepper, barely covered with water (I prefer very little water and the pot covered) when the pumpkin is tender, drain it and put it in a bowl. Clean the skin of the pepper with a teaspoon put the garlic, pepper and cumin in a mortar and mash until a homogeneous paste is made, add olive oil, blending until a creamy texture is obtained. Pour over the boiled and warm or cold pumpkin, and mix well, serve cold or warm.
