These pumpkin nuggets are totally healthy since their main ingredient is pumpkin, a very rich vegetable that is low in calories and fat. Due to the texture of the pumpkin we do not need to use béchamel for its preparation, therefore, we eliminate the extra calories from the sauce. You can fry the vegan nuggets in a pan, or, to make them even healthier, bake them. They are crispy on the outside and very tender on the inside, perfect as a starter or snack. Ingredients to make Pumpkin Nuggets:
- 500 grams of pumpkin
- ⅓ cup of water
- ⅓ cup of wheat flour
- ⅓ cup breadcrumbs
- ½ teaspoon oregano
- ½ teaspoon parsley
- ½ teaspoon basil
- 1 splash of olive oil
- 1 pinch of pepper
- ½ teaspoon salt
How to make Pumpkin Nuggets:
- Cook the diced pumpkin in water for 10-12 minutes until soft.
- Crush it in the blender or mash it with a fork until it is a puree.
- In a bowl, mix the pumpkin puree with the flour, a dash of oil, salt, pepper, oregano, basil and parsley.
- Take small portions of pumpkin dough with wet hands, form small balls and flatten them into nuggets.
- Dip each pumpkin nugget in the breadcrumbs.
- Heat a pan with oil and fry the pumpkin nuggets until golden brown or bake them for half an hour at 180 degrees.
