Pumpkin foam recipe

If you want to surprise everyone with an original and elegant recipe but without losing the traditional and homemade flavor, the pumpkin foam will undoubtedly please you. Those yes, you need a kitchen siphon to prepare it but it will certainly be worth it. Learn a different, original and creative way of eating pumpkin and give it an Iberian touch with bacon and ham powder.

Ingredients to make Pumpkin Foam:

  • 250 grams of peeled pumpkin
  • 250 milliliters of meat or chicken broth
  • 1 tablespoon of olive oil
  • 1 tablespoon of soy lecithin
  • 2 slices of ham
  • 2 slices of bacon

How to make Pumpkin Foam:

  1. First we will start by making the ham and bacon powder.
  2. To do this, line a baking tray with parchment paper and place the slices of both ham and bacon on it.
  3. Then cover the slices with another sheet of baking paper and place another tray on top so that it presses.
  4. Bake at 180º for about 20 minutes, checking the tray after the first 15 minutes.
  5. Meanwhile, we will work with the pumpkin foam. First of all keep in mind that to make this recipe we will need a kitchen siphon, in order to create the foam.
  6. Cook the chopped pumpkin with the broth until it is tender, this can take about 20 minutes.
  7. Check the slices that are in the oven.
  8. Both the bacon and the ham should be crisp and stiff. If not, take the tray back to the oven for a few more minutes
  9. When it is ready, cut it as finely as possible- For this you can use a coffee grinder, your usual kitchen robot or a knife. Reserve the bacon and ham powder.
  10. To finish with the pumpkin foam, mash all the vegetables together with the broth and add the oil and lecithin, mix until everything is integrated.
  11. Then take the cream to the siphon along with a charge of gas and leave it in a bain-marie so that it is hot when serving.
  12. To serve, I recommend you sprinkle some ham and bacon in the bottom of a glass and add the pumpkin foam on top, then decorate with another touch of bacon and ham powder and bon appetite.
  13. Pumpkin mousse with bacon powder and ham is an elegant and delicious appetizer.
