Pumpkin Cream Recipe

Ingredients to make Pumpkin Cream:

  • 1 kilogram of Auyama
  • 1 liter of water
  • 3 tablespoons of Butter
  • 1 cup of onion
  • ½ cup of Garlic leek
  • 4 cups of meat broth
  • 1 cup of cream (200 milliliters)
  • 1 pinch of white pepper
  • 1 pinch of salt

How to make pumpkin cream:

  1. Cook the peeled and chopped pumpkin in a pot with the water and salt until softened, drain and set aside.
  2. Meanwhile, heat the butter in a saucepan, add the onion and garlic leek and fry until wilted.
  3. From the garlic joint, also known as leek, we will only use the white part.
  4. Add the beef broth to the pot and bring to a boil. Cook over low heat for 3 more minutes and once removed from the heat let stand.
  5. Blend all the ingredients until you get a homogeneous cream. Return the mixture to the pot again and simmer until it boils. Let boil for 3 more minutes and correct the seasoning.
