Ingredients to make Pumpkin Cream:
- 1 kilogram of Auyama
- 1 liter of water
- 3 tablespoons of Butter
- 1 cup of onion
- ½ cup of Garlic leek
- 4 cups of meat broth
- 1 cup of cream (200 milliliters)
- 1 pinch of white pepper
- 1 pinch of salt
How to make pumpkin cream:
- Cook the peeled and chopped pumpkin in a pot with the water and salt until softened, drain and set aside.
- Meanwhile, heat the butter in a saucepan, add the onion and garlic leek and fry until wilted.
- From the garlic joint, also known as leek, we will only use the white part.
- Add the beef broth to the pot and bring to a boil. Cook over low heat for 3 more minutes and once removed from the heat let stand.
- Blend all the ingredients until you get a homogeneous cream. Return the mixture to the pot again and simmer until it boils. Let boil for 3 more minutes and correct the seasoning.
