Pumpkin and spinach pie recipe

Ingredients to make Pumpkin and Spinach Pie:

  • 1/4 of yellow squash or squash or pumpkin
  • 200 grams of ricotta (for the dough)
  • 100 grams ricotta (for the filling)
  • 1 cup of flour
  • 1 egg
  • 1 bunch of spinach cooked
  • 1/2 zucchini or zucchini cut and cooked
  • 1/2 chopped onion
  • 1/2 bell pepper chopped
  • Salt to taste
  • Grated Parmesan cheese
  • mozzarella cheese
  • pepper to taste
  • cumin to taste

How to make Pumpkin and Spinach Pie:

  1. Cook the pumpkin and make it puree.
  2. Add the ricotta cheese and the egg with salt to taste and mix. Gradually add the flour to form a thick paste.
  3. Put a portion of the squash dough in a nonstick skillet and spread it over the entire base.
  4. Let cook over medium heat for 5 minutes, turn around so that it browns on the other side and remove.
  5. Repeat the step until you have three layers to assemble the pumpkin and spinach pie.
  6. In a frying pan, put the spinach, the zucchini, the bell pepper, the onion and the ricotta and cook, seasoning to taste until the flavors are integrated.
  7. In a mold, put a little oil on the base and put the first base of the pumpkin cake with spinach.
  8. Add a layer of the filling preparation.
  9. Put another sheet of pumpkin dough and add the filling with a layer of mozzarella cheese.
  10. Add the last layer of the pumpkin dough and put more mozzarella cheese on top.
  11. Finally, take the spinach pie to the oven to integrate and melt the cheese (temperature 180 °C for 10 minutes).
  12. Serve the pumpkin and spinach tart with béchamel sauce, Bolognese sauce or another. Clever!
