Pumpkin and Quinoa Cream Recipe

Ingredients to make Pumpkin and Quinoa Cream:

  • 80 grams of Pumpkin
  • 1 glass of white wine
  • 1 cup of cooked Quinoa
  • 300 milliliters of chicken broth
  • 1 cup of milk (240 milliliters)
  • 2 units of white onion
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Pumpkin and Quinoa Cream:

  • The first step to make our recipe with quinoa is to pre-list all the ingredients.
  • Cut the pumpkin into medium squares and take it to a pot with enough water to cover it completely. Add a pinch of salt and cook over medium heat until soft.
  • Remove the pumpkin to a bowl and wait for it to cool down.
  • Take a pan over medium heat and sauté the white onion with a little sunflower oil.
  • Add the sautéed onion to the bowl where we have the pumpkin.
  • Pour the chicken broth and blend or process our pumpkin cream until all the ingredients are integrated.
  • Take the previous preparation to a pot over medium heat, add a little garlic paste, salt, pepper, white wine and milk. Let it cook over medium heat for about 10-15 minutes, or until you notice that our pumpkin cream is thick.
  • Add the cooked quinoa to our pumpkin cream and serve adding a little milk cream with red pepper to taste, this recipe is ideal for cold days. As a second course, you can prepare a grilled chicken breast or tofu burgers or if you prefer an option suitable for vegetarians.
