How to make Pumpkin Oatmeal Meatballs:

  • To start with the recipe for pumpkin and oatmeal meatballs, you must first remove the rind from the pumpkin and the seeds inside, cut it into pieces and add it to cook. We point out that it can be steamed, baked or microwaved. If you cook it in the microwave, enter it at maximum power for 6-7 minutes. Once you have the pumpkin well cooked, mash with a fork until you have a dough.
  • In the container with the crushed pumpkin, add 1 egg, 2 minced garlic, minced parsley, pepper, salt and 3-4 tablespoons of oatmeal. Mix everything very well, if you notice that the dough is too soft, add more oats. Put the bowl in the fridge and leave it for 2 hours so that all the ingredients acquire flavor.
  • Remove the dough from the fridge and in a bowl add the breadcrumbs or oatmeal. Make balls with the dough and pass them through the bread or through the oatmeal.
  • Tip: if you want to make healthier meatballs, you can roll them in oatmeal instead of coating them in breadcrumbs. Finally, as an option you can add them in a tray for the oven and introduce them until they are golden brown. A completely healthy recipe!
