- 1/2 cup finely chopped onion
- 1 tablespoon of oil
- 2 cups of mashed potatoes

- 1 beaten egg

How to make puff pastry dumplings:
- Preheat the oven to 400º. In a small skillet over medium heat, heat the oil and sauté the onion until golden brown.
- In a medium bowl mix the puree with the onion and check the seasoning. Add salt and pepper if necessary.
- on a floured surface, roll out the puff pastry until thin. Using a suitable cutter, cut the dough. Place a little puree in the center of each cut portion, brush the edge with egg, and fold to form half-moon dumplings, seal the edges firmly with a fork to prevent them from opening when baking.
- Place the empanadas on a baking tray, brush with the remaining egg and bake until golden brown. Take them out and serve.
