Puerto Rican Sancocho Recipe

Ingredients to make Puerto Rican Sancocho:

  • ½ pound ground beef
  • ¼ pound pork bone
  • 1½ liters of water
  • 1 teaspoon salt
  • 1 unit of Onion
  • 1 unit of sweet pepper
  • 1 unit of Tomato
  • 2 coriander leaves
  • ½ unit of green pepper
  • 1 unit of corn
  • ½ pound of Ocumo or Yautia
  • ¼ pound sweet potato
  • ¼ pound pumpkin
  • ¼ pound potato
  • ¼ pound Yam
  • 1 unit of ripe banana
  • 1 unit of green banana
  • ¼ cup tomato sauce
  • 2 cloves of garlic

How to make Puerto Rican Sancocho:

  1. To start preparing this powerful Puerto Rican sancocho, the first thing you should do is gather all the ingredients. Cut all the vegetables into pieces and wash the pork bone well.
  2. Tip: Keep in mind that depending on the country there will be vegetables that have another name or that you cannot get, if this is the case, you can eliminate them or substitute them to your liking.
  3. Use a large enough pot and heat the water with the salt until it boils. When it breaks the boil, add the first vegetables, these are: onion, tomato, cob and chili along with the coriander, meat and pork bone.
  4. Continue cooking over high heat until it boils again, the pot must be uncovered. When this second boil breaks, cover the pot and lower the flame to medium-high until it boils for an hour.
  5. After this time, add the rest of the ingredients to the pot. These are the ocumo, the pumpkin, the potatoes, the yams and the plantains along with a pinch of salt and the tomato sauce. Mix everything well and turn the flame up again until it boils.
  6. When this other boil breaks, cover the sancocho and lower the flame to medium-high heat. Continue cooking for 45 minutes and then uncovered another 10 minutes.
  7. Finally, remove the green plantain and puree them together with the garlic. Form balls with this puree and place them back in the stew pot. Check that the meat and vegetables are tender and turn off the flame.
  8. Serve the Puerto Rican sancocho and enjoy this homemade soup as a family. Accompany with white rice, avocado and homemade bread.
