Ingredients to make Puerto Rican Casserole:
- 1 cup mashed sweet potato
- 1 cup mashed pumpkin
- 1/2 cup coconut milk
- 1/4 cup rice flour
- 1 tsp. Salt
- 1/2 cup sugar
- 2 tsp. cinnamon powder
- 3/4 tsp. ground spice cloves
- 2 beaten eggs.
How to make Puerto Rican Casserole:
- Combine the coconut milk with the sweet potato and pumpkin, pass them through a strainer to remove the fiber, then add the other ingredients and mix well
- Place this mixture in a greased mold and bake in a previously heated oven at 350 degrees f. for 45 min., cool and flip on a plate.
