Ingredients to make PUCHERO (chicken broth):

  • half chicken or hen
  • salty bacon
  • salty bones
  • salty rib (optional)
  • celery
  • carrot
  • potatoes
  • chickpeas soaked the day before

How to make PUCHERO (chicken broth):

  1. The day before, put a handful of chickpeas to soak (so that they become tender when it boils) in the express pot, not the quick one, introduce all the ingredients that we have previously mentioned, let it boil for a little while and remove the foam. That is releasing once removed, more or less, the foam we close the pot and let it boil with the valve on.
  2. When the valve begins to spin, then from there we count approximately 45 minutes and you will get a wonderful white broth typical of Andalusia called pucherito, after which you add the pasta that you want, noodles, pine nuts, balls and even rice. We boil an egg, we cook it and we make it into small pieces. You can also make small pieces of Serrano jam and a sprig of good grass.
  3. NOTE: the turkey gives it a great flavor too
