Ingredients to make Provençal Stew:
- 700 grams of beef in pieces
- 50cc of olive oil
- 100 grams of pancetta
- 2 onions
- 1 garlic clove
- 2 carrots
- 250 grams of tomatoes
- 1 tablespoon of flour
- 300 ml of meat broth
- 1 bouquet of fine herbs
- 50 grams of canned mushrooms
- 8 pitted black olives
- Salt
- pepper-to-taste
How to make Provençal Stew:
- Brown the meat pieces in a large pot
- Remove them and place them in a pan.
- Brown the sliced bacon over high heat and add the chopped onions, garlic and carrots.
- Add the tomatoes, sprinkle the flour and incorporate this preparation into the meat.
- Add the fine herbs and mushrooms.
- Cover and cook over low heat for two and a half to three hours.
- Add the olives to the pot 15 minutes before the end of cooking.
- Serve accompanied by mashed potatoes.
