Preserved Anchovies Recipe

Ingredients to make Preserved Anchovies:

  • very fresh anchovy
  • Laurel
  • coarse salt

How to make Canned Anchovies:

  1. Wash the anchovies, spread on a clean cloth and dry with another cloth. Meanwhile, prepare a very clean and dry glass jar and put a 1.5 cm layer of coarse salt on the bottom. Of thickness.
  2. Place on the salt a layer of anchovies in spokes and very close to each other, sprinkle with plenty of salt.
  3. Continue like this until the jar is full, adding from time to time a bay leaf. Finish with a layer of salt.
  4. Place a weight on the anchovies and leave salted for at least a month. Before using them, wash them very well under running water.
