Prawn Cod Recipe

Ingredients to make Prawn Cod:

  • 6 Pieces of Cod (1.2 kg approx.)
  • 12 Prawns
  • 2 onion
  • 2 Garlic Cloves
  • 2 green peppers
  • 2 tomatoes
  • 300 ml of White Wine
  • 175 ml of Water
  • 4 Tablespoons Fried Tomato
  • 3 Eggs (battered)
  • Flour (battered)
  • salted
  • Olive oil.

How to make Prawn Code:

When buying the cod, if we choose the salted one, we must keep it in very cold water for 24-48 hours, changing the water approximately every 6 hours. The water must be very cold to prevent the cod pieces from opening, adding ice if necessary. To make it juicier, we will change the water for milk in the last 4 – 5 hours of the desalting process, draining it and drying it well with a clean cloth before cooking it. Those of you who opt for salted pieces simply wash before cooking and that’s it. Come on, I don’t roll up anymore. Let’s go with the preparation of the dish.

  1. Let’s start with the vegetables. Chop the onion, pepper and tomato into squares as for a stir-fry (which, after all, is what we are going to do). Chop the garlic cloves as small as we can. 2. In the pot or pan where we are going to prepare the recipe, we pour oil until we cover the bottom and when it is hot we add the onion. Let cook for a couple of minutes and add the minced garlic, stir well and leave for another couple of minutes. Now we add the green pepper and the tomato, a pinch of salt and let it cook for about 5 minutes or until you see that the vegetables are already browning a bit. After that time we add the white wine, the water and leave over medium heat for about 15 – 20 minutes, until the vegetables are well done and we hardly have any sauce left (do not let it dry completely, it would be very doughy) . While the sauce is just done, let’s start with the cod.
  2. Prepare the 2 battered dishes, separately the egg and flour. Heat a frying pan with plenty of oil. Dip the cod fillets first in the flour and then in the egg and fry until the batter begins to turn golden. As we fry, we drain the excess oil and reserve.
  3. We return to the vegetables. We already have the soffit ready. All that remains is to add the tablespoons of fried tomato stir well and pass it through the blender or for the more classic ones we can also use the potato mill.
  4. In the pot or pan where we prepare the vegetables, we are placing the cod fillets and pour over the fried vegetable smoothie. We put back to cook over low heat, checking that it does not burn for approximately 5 minutes. Then we add the prawns, making sure that they are as covered in sauce as possible and let cook, continue over low heat, between 10 – 15 minutes, moving the pot from time to time in case the sauce tries to stick to the bottom.
  5. It is now ready to serve and savor.
