Ingredients to make Prawn and Squid Risotto:

  • 300 grams of Arborio rice.
  • 150 grams of prawns.
  • 150 grams of squid rings.
  • 50 grams of butter or lard.
  • 2 tablespoons of olive oil.
  • Half a cup of white wine.
  • 1 cup of milk cream.
  • Pepper to taste.

How to make Prawn and Squid Risotto:

  1. Prelist the ingredients.
  2. In a medium pot, put the Arborio rice to cook with the butter or lard, for a cup of rice two of water. The butter will give the risotto a creamier consistency.
  3. In a medium skillet, add the olive oil once hot add the prawns and squid rings with finely chopped garlic. Let sauté for approximately five minutes, add salt and pepper to taste.
  4. Add the wine and let the alcohol reduce a little. Let cook for about two more minutes. Turn off the fire.
  5. Once the rice is ready, we must mix the squid rings and the prawns with the rice. Stir very well so that the ingredients are well distributed throughout the preparation. Finally add the milk cream and let it keep for two to three more minutes.
  6. Serve the dish decorating with a little dried oregano on top.
