Prawn and broccoli risotto recipe

Ingredients to make Prawn and Broccoli Risotto:

  • 500 grams of Rice
  • 1 liter of broth
  • 1 unit of Broccoli
  • 150 grams of Prawns
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Shrimp and Broccoli Risotto:

  1. Here we have the ingredients to make this risotto with vegetables.
  2. We chose a special rice for risottos.
  3. The broth is a homemade vegetable and fish broth, although you can opt for a ready-made one or just vegetables. We have bought the prawns already peeled and cooked.
  4. The first step to cook this rice with prawns is to boil the broccoli in plenty of water.
  5. Before, we will have thoroughly washed and chopped it, eliminating the part of the stem.
  6. For the risotto we want the broccoli to be very soft and form a cream, so it has to be quite cooked.
  7. In any case, think that later it will boil more together with the risotto, so with 10 minutes of cooking now it will be enough.
  8. In the saucepan where we are going to make the risotto, we will heat the vegetable and fish broth and, when the broccoli is done, we will add it.
  9. We will also take advantage of the broth that the broccoli has left, you can pour it into the saucepan.
  10. When the broth boils, we will throw the rice and cook it according to the instructions of the brand, between 15 and 18 minutes normally for this type of rice, over medium heat.
  11. You have to constantly stir to prevent the risotto from sticking.
  12. About five minutes before the rice is ready, add salt and pepper to taste and add the cooked and peeled prawns.
  13. The risotto with broccoli and prawns is ready, ideally it should be a little soupy.
  14. Serve the vegetable and shrimp risotto and accompany it with a red wine.
  15. Purists say that with pasta or rice dishes with shellfish or fish you should not put Parmesan cheese, but the truth is that this recipe with broccoli works great. Bon Appetite!
