Powdered Recipe

Polvados are a traditional Chilean sweet that is relatively easy and fairly quick to make; they can get you out of trouble at any time, as it is perfect for family gatherings or visits with friends. They are easily confused with alfajores, but the powdered ones are softer, larger and with fewer ingredients. Their name comes from the appearance that powdered sugar gives them when served.

Ingredients to make Powdered:

  • 5 eggs
  • 1 cup of wheat flour (140 grams)
  • 1 teaspoon of baking powder (chemical yeast)
  • 1 cup powdered or icing sugar
  • 300 grams of dulce de leche (manjar, arequipe)
  • baking paper

How to make Powdered:

  1. Preheat the oven to 180 °C.
  2. Separate the eggs and mix the yolks with 3/4 cup of powdered sugar until they get a little thick.
  3. Beat the egg whites until stiff and add the previously prepared mixture, stir with encircling movements and pour the mixture into a sleeve to decorate.
  4.  If you don’t have one, you can improvise one by opening a little hole in one corner of a plastic bag and putting the mixture in there.
  5. On a tray with some parchment paper, form discs of the mixture about the size of your palm.
  6. Bake the discs for about 10 minutes at 180 °C, check them constantly because they brown quickly and can be very toasted.
  7. Tip: Do not poke or touch them until they are at room temperature, as they can deflate or break.
  8. When they are tempered they will be a little firmer.
  9. Fill each disc at the bottom to cover the edges well and join them at the arequipe or delicacy part.
  10. Serve with a glass of warm milk and enjoy these delicious Chilean powdered drinks.
