Ingredients to make Bird Soup:
- For 4 people:
- 2 chicken skeletons
- 4 carrots
- 2 onions
- 3 garlic cloves
- 2 leeks
- 100g peas
- a sprig of celery
- 75g noodles
- 100g of ham
- Water
- Oil
- Salt
How to make bird soup:
- To make the broth, cook the green leeks, the chicken skeletons, 2 carrots (the green ones too), the garlic cloves and the onions in salted water for 30 minutes.
- Chop the white of the leeks, another 2 carrots and the celery and brown them in another saucepan.
- After mixing well, add the peas and noodles.
- Dice the ham and add to the vegetables.
- Strain the broth over the pan where we have the vegetables.
- Heat the soup for 2-3 minutes, transfer to a tureen and serve.
