Poultry Soup Recipe

Ingredients to make Bird Soup:

  • For 4 people:
  • 2 chicken skeletons
  • 4 carrots
  • 2 onions
  • 3 garlic cloves
  • 2 leeks
  • 100g peas
  • a sprig of celery
  • 75g noodles
  • 100g of ham
  • Water
  • Oil
  • Salt

How to make bird soup:

  1. To make the broth, cook the green leeks, the chicken skeletons, 2 carrots (the green ones too), the garlic cloves and the onions in salted water for 30 minutes.
  2. Chop the white of the leeks, another 2 carrots and the celery and brown them in another saucepan.
  3. After mixing well, add the peas and noodles.
  4. Dice the ham and add to the vegetables.
  5. Strain the broth over the pan where we have the vegetables.
  6. Heat the soup for 2-3 minutes, transfer to a tureen and serve.
