Poultry Consomme Recipe

Ingredients to make Poultry Consomme:

  • 2 egg whites
  • 500 grams of beef bone
  • 1 glass of dry sherry
  • 1 turnip
  • 1 chicken breast
  • 250 grams of chicken breast or thigh
  • 2 leeks
  • 10 grams of salt
  • 1 carrot

How to make Poultry Consomme:

  • In a large saucepan with water, cook the veal bones, the breast and the chicken, all very clean and the washed, peeled and chopped vegetables.
  • Add the whites and beat continuously until it starts to boil.
  • Season with salt, cover and cook over low heat for about 2 hours.
  • Strain the broth obtained through a strainer lined with fine gauze and leave to cool.
  • Once cold, remove the layer of fat that floats on top.
  • Add the sherry and give a final boil.
