Ingredients to make Poultry and Veal Consommé:
- 500 grams of beef bone
- 2 eggs, the whites
- 1 glass of dry sherry
- 1 turnip
- 1 chicken breast
- 250 grams of chicken breast or thigh
- 2 leeks
- 1 pinch of salt
- 1 carrot
How to make Poultry and Veal Consommé:
- In a large saucepan with water, cook the veal bones, the breast and the chicken, all very clean and the washed, peeled and chopped vegetables.
- Add the whites and beat continuously until it starts to boil.
- Foam.
- Season with salt, cover and cook over low heat for about 2 hours.
- Strain the broth obtained through a strainer lined with fine gauze and leave to cool.
- Once cold, remove the layer of fat that floats on top.
- Add the sherry and give a final boil.
- It is served very hot.
