Poultry and Veal Consommé recipe

Ingredients to make Poultry and Veal Consommé:

  • 500 grams of beef bone
  • 2 eggs, the whites
  • 1 glass of dry sherry
  • 1 turnip
  • 1 chicken breast
  • 250 grams of chicken breast or thigh
  • 2 leeks
  • 1 pinch of salt
  • 1 carrot

How to make Poultry and Veal Consommé:

  1. In a large saucepan with water, cook the veal bones, the breast and the chicken, all very clean and the washed, peeled and chopped vegetables.
  2. Add the whites and beat continuously until it starts to boil.
  3. Foam.
  4. Season with salt, cover and cook over low heat for about 2 hours.
  5. Strain the broth obtained through a strainer lined with fine gauze and leave to cool.
  6. Once cold, remove the layer of fat that floats on top.
  7. Add the sherry and give a final boil.
  8. It is served very hot.
