Ingredients to make Potatoes with Rajas:

  • 3 units of medium potatoes
  • 1 bunch of water
  • 1 pinch of salt
  • 2 poblano peppers
  • ½ onion, chopped
  • 1 cup of corn kernels
  • 1 tablespoon of oil
  • 1 pinch of pepper

How to make Potatoes with Rajas:

Wash and peel the potatoes, then chop them into small squares and cook them in water with a pinch of salt until they are soft. When they are ready, drain the water and reserve. While the potatoes are cooking, grill the poblano peppers over medium-high heat until fully toasted. Let them rest in a plastic bag to sweat and make it easier to remove the skin.
