Potatoes stuffed with vegetables and bacon recipe

With this step by step we are going to make a very simple and delicious recipe: potatoes stuffed with vegetables and bacon, which go very well with any meal. This recipe can also be served as an appetizer or snack when we have a special visitor at home.

Ingredients to make Potatoes stuffed with vegetables and bacon:

  • 10 units of medium potatoes.
  • 1 unit of Carrot
  • 1 unit of red bell pepper or paprika
  • 1 unit of white onion
  • 150 grams of turkey or pork bacon
  • 1 pinch of dried thyme
  • 200 grams of mozzarella cheese
  • 120 grams of sweet corn
  • 1 pinch of salt
  • 1 pinch of Pepper
  • 1 pinch of garlic paste
  1. How to make Potatoes stuffed with vegetables and bacon:
  2. Our first step in preparing the stuffed potatoes recipe is to prepare the ingredients.
  3. In a deep pot, add the potatoes with their skins, that is, they contain the skin, and cover them with water, bring to medium heat with a little salt and cook until they are ready. Remove from heat.
  4. Bring a frying pan over medium heat and add a little sunflower oil, once hot add the onion cut into squares with a little salt and pepper to taste.
  5. Once you observe that the onion obtains a transparent color, add the carrot cut into small squares and the pepper or paprika, let it fry very well until our vegetables are crispy.
  6. Add a little garlic paste and thyme to taste to flavor our filling. Remove to a bowl and correct the seasoning with a little salt and pepper if necessary.
  7. In the same pan where the vegetables were fried add the turkey or pork bacon in strips, if you wish you can add a little oil so that it browns well.
  8. Once you see that our bacon is golden, add the tender corn and let it brown very well.
  9. Remove the bacon and the golden corn, mix very well with the vegetables that we had reserved in the bowl.
  10. Cut the potatoes in half and remove a bit of the filling, as shown in the photograph, so that we can fill them later.
  11. Make the stuffed potatoes by placing portions of the mix of sautéed vegetables with corn and bacon on each of them.
  12. Add a little mozzarella cheese on each of the stuffed potatoes. Bake at 160 degrees Celsius until the cheese melts.
  13. Serve the gratin stuffed potatoes
