Potatoes are a fundamental ingredient in our diet and we love them. For this reason, we like to innovate and create recipes with different and original potatoes. The potatoes that we have prepared are a variation of the typical German potato and sausage salad, to be eaten as a side dish, at dinner or at any thematic event, for example German food.

Ingredients to make Sausage Stuffed Potatoes:

  • 4 potatoes
  • 2 frankfurter type sausages
  • 6 Gherkins in vinegar
  • ½ spring onion
  • 4 tablespoons of Mayonnaise
  • 2 teaspoons of grain mustard
  • 1 pinch of salt
  • 1 splash of olive oil
  • 1 handful of Parsley

How to make Sausage Stuffed Potatoes

  1. We gather all the ingredients to prepare the potatoes stuffed with sausages.
  2. First of all, we cut the sausages into slices and cook them in boiling water for 2-3 minutes.
  3. They can also be sautéed in a pan. We booked.
  4. We wash the potatoes, cut them into halves lengthwise and cook them in boiling water for 10 minutes.
  5. Drain the potatoes, arrange them on a baking tray, and put a little salt and olive oil on top. We put the potatoes in the oven at 190 ºC for 25-30 minutes.

  10. In the same way, we chop the gherkins in vinegar and add them to the bowl with the rest of the ingredients.
  11. Gherkins are made with a mixture of vinegar, sugar and aromatic herbs, and are a fundamental ingredient in this German potato salad.
  12. Add the mayonnaise and mustard to the bowl and mix well so that all the flavors are integrated. We have used a light mayonnaise
  13. Once the potatoes are cooked, we empty them with the help of a spoon and leave the shell unbroken so that we can fill it later. Chop the potato flesh and add it to the bowl with the rest of the ingredients. If necessary we can put a little salt.
  14. To get a perfect German salad, mix the cooked potatoes well with the sausages and the rest of the ingredients.
  15. Once everything is mixed, fill the potatoes and serve with a little chopped fresh parsley on top.
