This recipe is based on a recipe for potatoes stuffed with chorizo and this time I wanted to make a version with ham and mushrooms, an exquisite and perfect combination for the classic dish of stuffed potatoes. Although there are many steps, this recipe is very easy to make and also cheap, so don’t wait any longer and surprise everyone at home with this delight.

Ingredients to make Potatoes stuffed with ham and mushrooms:
- 6 units of small potatoes
- 4 units of whole mushrooms
- ½ onion unit
- 80 grams of chopped ham
- 1 jet of Oil
- 1 cup apple cider vinegar
- 1 pinch of Nutmeg
- 1 splash of milk
How to make Potatoes stuffed with ham and mushrooms
- The first step to prepare these delicious stuffed potatoes will be to prick each of the potatoes with a toothpick, bathe them with a drizzle of oil, pepper and salt and wrap them in aluminum or silver foil.
- Take to the oven preheat to 180º and cook for about 20 minutes on each side.
- Meanwhile, we will make the sauce for the filling.
- Chop the ham, mushrooms and onion finely and sauté with a little oil over low heat, all together and mixing so that the ingredients are distributed evenly.
- Then add the vinegar and let it reduce cooking. Book.
- When the potatoes have been roasted, remove the aluminum foil and cut off the tips on each side and carefully scoop out the potato flesh, forming it into a tube.
- Reserve this pulp and return the potatoes to the oven to cook them for about 8 minutes so that they harden and we can fill them.
- Meanwhile, recover the previously prepared sauce and make the filling by mixing it with the potato pulp, milk, nutmeg and salt.
- Mix well and correct the seasoning if necessary.
- Finally, carefully fill the potatoes and decorate with a cheese hat to give the final touch to the potatoes stuffed with ham and mushrooms.
- Once the potatoes are assembled, you can take them for a few seconds in the oven to gratin them.
