Potatoes stuffed with ground beef recipe

Who doesn’t like stuffed potatoes? Colombian stuffed potatoes are a perfect garnish for almost any dish, plus they are so versatile that they can be served for breakfast, dinner or even as an appetizer. On this occasion, we teach you how to prepare its version with meat and that is that the potatoes stuffed with ground meat will conquer your heart and your table!

Ingredients to make Potatoes Stuffed with Ground Beef:

  • 8 units of potatoes or medium potatoes
  • 150 grams of ground beef
  • 100 grams of ground pork
  • 2 units of tomato
  • 80 grams of onion
  • 1 glass of red wine
  • 1 teaspoon of Parsley
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Ground Beef Stuffed Potatoes:

  1. Our first step to make the stuffed potatoes recipe is to prepare the ingredients.
  2. Wrap each of the potatoes in aluminum foil and cook in the oven at 200ºC for approximately 60 minutes or until soft.
  3. Once you have the roasted potatoes, cut them in half and remove some of the filling with the help of a small spoon.
  4. Reserve all the pulp that you remove in a bowl since we will use it later to make the filling.
  5. Besides, make a sauce of onion and tomato.
  6. Chop these ingredients finely and sauté in a frying pan with a drizzle of oil. Add salt, black pepper and garlic paste to taste.
  7. Add the meat to the pan, both beef and pork.
  8. Stir everything and mix well with the sauce so that the flavors are integrated.
  9. Next, cover with the wine and lower the heat so that the potato filling simmers.
  10. Rectify flavor and if you want you can add a little of an extra ingredient.
  11. Remove the meat from the heat and mix with the pulp removed from the potatoes that we had reserved.
  12. Knead these two ingredients until the filling is as uniform as possible.
  13. Fill the potatoes with the meat and sprinkle some fresh parsley on top to decorate.
  14. If you want you can add a little cheese and give it a touch of oven to gratin.
