Potatoes stuffed with egg and bacon recipe

The potato is a tuber that is used both to prepare main dishes and to prepare starters and garnishes. It is a very versatile food that combines perfectly with a complete list of ingredients, ranging from different types of meat and fish to rice and vegetables. However, on this occasion, I have decided to use it as the main ingredient and I have prepared a dish full of flavor as well as striking. Do you want to know the step by step? Keep reading and discover how to make baked potatoes stuffed with eggs and bacon.

Ingredients to make Potatoes stuffed with egg and bacon:

  • 4 small-medium potatoes
  • 4 slices of bacon
  • 4 small-medium eggs
  • 1 pinch of Parmesan cheese
  • 1 pinch of chopped parsley
  • 1 pinch of black pepper
  • 1 pinch of salt

How to make Bacon and Egg Stuffed Potatoes:

  1. In order to prepare stuffed potatoes we must review all the ingredients and make sure that nothing is missing.
  2. If you plan to serve this dish as a starter like I did, I recommend opting for potatoes and small eggs.
  3. While if you want to take advantage of it for a main dish, it is better to use a medium size.
  4. Wash the potatoes and place them in a saucepan or pot with water and a little salt.
  5. We put them on the fire and let them cook for approximately 20 minutes, over medium heat.
  6. To check that the potatoes are ready, prick them with a fork, you should feel them soft.
  7. When they are ready, we remove them from the saucepan and put them under cold water to stop the cooking. Then, we follow the following steps:
  8. Cut each potato in half lengthwise.
  9. With the help of a spoon, we empty the interiorof each half, being careful not to break the skin.
  10. Let’s start stuffing the potatoes! To do this, we season the inside of each half with a little salt and pepper to taste.
  11. Then, we add grated cheese also to taste and half a slice of bacon cut into strips or small squares.
  12. Add the egg over the grated cheese and bacon.
  13. Later, we add more cheese and chopped bacon and finish the filling with a little parsley sprinkled on top or any other aromatic spice that we like.
  14. Tip: Preheat the oven to 200ºC.
  15. Wrap each half with aluminum foil, place them all on a baking tray and bake them for 15-20 minutes, or until when inserting a fork inside each potato we observe that the egg is well cooked.
