Potato stew with artichokes recipe

  • 5 artichokes
  • 4 potatoes
  • 1 onion
  • 2 cloves of garlic
  • 1 dessert spoon of sweet paprika
  • 1 liter of water
  • 1 unit of lemon
  • 1 handful of parsley
  • 1 piece of salt
  • 1 splash of olive oil
  • 150 milliliters of white wine

How to make Potato Stew with Artichokes:

  1. To make this recipe for potatoes with artichokes, start by cleaning the artichokes. Cut the front part, about 2 fingers, and remove the leaves until you reach the center, where they are whiter and tenderer.
  2. Prepare a bowl with water, some parsley leaves and a squeeze of lemon. Put the squeezed piece of lemon into the water. Cut the artichokes in half, remove the hairs from the center and cut into quarters. Put the pieces of artichokes in the bowl in the water so they don’t turn dark.
  3. Prepare the stew, peel and chop an onion and a couple of cloves of garlic. Put a pan with a splash of oil, add the chopped onion and let it simmer for a few minutes. When it begins to take color, add the chopped garlic.
  4. Peel and cut the potatoes without reaching the end, crush them to release the starch that will give the sauce more body. Add them to the pan, stir for a minute and add the sweet paprika; stir everything together.
  5. Before the paprika burns, add the white wine. Let it reduce for a couple of minutes. Drain the artichokes and add them to the pot. White wine is optional; there are those who do not put it.
  6. Add the water until the potatoes are well covered. Add a little salt and cook for about 15-20 minutes or until the potatoes and artichokes are tender. If they see that the broth dries up, add more water so that later there is a good broth.
  7.
