Ingredients to make Potato stew with pork ribs:

  • For 4 people:
  • 1 kilo of ribs not very meaty.
  • 400 grams of potatoes.
  • A head of garlic.
  • An onion.
  • A red bell pepper.
  • four bay leaves
  • Two tablespoons of sweet paprika.
  • A coffee spoon of hot paprika (optional)
  • Olive oil.
  • White wine (a small glass)

How to make Potato Stew with Pork Ribs:

  1. In a pressure cooker, I put a splash of oil, covering the bottom of the pot. When it is hot, add the minced or mashed garlic with the salt (a tablespoon), when the garlic has taken on a color I put the paprika, trying not to burn it, and shortly after the ribs, which I have previously cut into pieces and with a wooden spoon I turn them until they take the color. At that time I add the rest of the garlic and the bay leaf and keep turning them for a couple of minutes and then cover them with water, close the pot and keep them for about twenty minutes once they start beeping.
  2. In a saucepan I put a little oil and caramelize the chopped onion, then the pepper cut into large pieces and the potatoes previously peeled and chopped to the cut and tear (I mean cut a little and throw), I give them a few turns so that they are taken of the onion and pour the wine and cook until the alcohol has evaporated (about five minutes), and then add the ribs and their broth and cook them over moderate heat for about ten more minutes until the potatoes are at their point (but we test them by pricking them with a toothpick), we remove them, let them rest for about half an hour. If we leave them for the next day, they are more exhausted (I mean they are tastier).
