Potato Sopes with Chorizo Recipe

Ingredients to make Potato Sopes with Chorizo:

For the mass:

• 600 grams of cornmeal (5 cups)

• 2 cups of warm water

• 1 teaspoon baking powder (chemical yeast)

• ½ teaspoon of salt

For the potato and chorizo filling:

• 500 grams of potato

• 250 grams of sausage

• 1 pinch of salt

• 1 tablespoon of oil

• At your service:

• Cabbage or lettuce

• Radish slices

• Sauce to taste

• Refried beans

How to make Potato Sopes with Chorizo:

Start the potato sopes with chorizo recipe by peeling and chopping the potatoes into cubes. You can also use canned potatoes. Cook the chopped potatoes in a pot with enough hot water and add a little salt. Let them cook for 15-20 minutes or until soft, then drain and set aside.

Trick: you can also make potato sopes with carrot or cauliflower by adding these ingredients to the pot.

In a pan or pot, heat a tablespoon of oil and fry the cooked potatoes for a few seconds, then add the chorizo and cook for 10 minutes, stirring constantly to prevent the sofrito from sticking and burning.
