Potato Salad with Capers Recipe

Ingredients to make Potato Salad with Capers:

  • 1/2 cup of capers prepared as indicated at the beginning of the preparation, with dry white wine and olive oil
  • 1 kilo of potatoes, preferably not very large to obtain small and uniform slices
  • 5 cups of water and two teaspoons of salt to cook them

For the Vinaigrette:

  • 1 small onion cut into slices
  • 1/3 cup of oil
  • 2 tablespoons of vinegar
  • 2 tablespoons of water
  • 1 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1/2 tablespoon prepared mustard

How to make Caper Potato Salad:

Drain them again and add dry white wine and then olive oil and leave them to macerate in a glass container in the fridge until they are going to be used. Peel the potatoes Cut into thin slices. They rinse. They slip away. Put them in a pot with the water and salt and cook until softened, about 15 minutes. Put the ingredients for the vinaigrette except the capers in a blender glass and beat until well emulsified.

The capers are stirred separately and everything is mixed with the hot potatoes. The salad is allowed to cool or put in the fridge until serving time.
