Pambazos are one of the most popular Mexican snacks. These are a super delicious dish, quite copious and easy to prepare or to find somewhere that sells snacks, but they are also very simple to prepare since their ingredients are very easy to get.

These potato pambazos with chorizo ​​that you will consist of a bread that is salty and not sweet at all. This bread is covered by a red sauce prepared with guajillo chili and as a liquid it has cola, in addition, they are filled with mashed potatoes combined with fried chorizo, and are seasoned with cream, lettuce and grated cheese. Once the pambazo is filled, it is fried and ready. As you can see, the preparation sounds a bit laborious but the truth is that it is not so much and also the result is incredible.

Ingredients to make potato Pambazos with chorizo:

For the pambazo:

  • ½ kilogram of potato
  • 200 grams of Chorizo
  • 8 pieces of bread for pambazo

For the sauce:

  • 6 pieces of guajillo chili
  • ½ liter of cola
  • 2 cloves of garlic
  • 1 pinch of Cumin
  • ¼ piece of Onion
  • 2 cups of fresh lettuce
  • ½ cup sour cream

How to make Potato Pambazos with Chorizo:

In the following image you can see the ingredients that we will need to prepare these delicious potato pambazos with chorizo. On the one hand we are going to start by cooking  the potatoes in enough boiling water, letting them cook until they are very soft.

On the other hand, we take the chorizo ​​and fry it in a frying pan and let it brown very well.  Once ready, we remove it from the heat and reserve it for a moment while the potatoes are cooked. Meanwhile, in the blender, place the guajillo peppers, the onion, the garlic, and the cola and blend until you get a smooth sauce for the Mexican pambazos. We are going to pass that chili sauce through a sieve and place it in a saucepan with previously heated oil so that it is fried for approximately 6 minutes over medium heat, adding a pinch of salt.  Once this time has passed, we remove it from the fire and reserve a moment.

Once the potato is ready, we puree it and add the chorizo, then mix very well until everything is well integrated. Now we take the bread for the potato pambazos with chorizo, we cut them in half horizontally, and on one of the halves we spread the mashed potato  mixture with the fried chorizo.

Then we completely cover the already stuffed Mexican pambazo bread with the sauce that we prepared a moment ago, and we take it to fry in a pan with previously heated oil. Let it brown slightly on each side and remove it from the heat. Now we take the bread covered with sauce and fried, we open it and on the mixture of mashed potatoes with chorizo ​​that is on one of the tops of the bread we spread sour cream, a little grated cheese and finely sliced ​​lettuce and well disinfected. And that’s it! We serve the potato pambazos with hot chorizo ​​and we can add a little more sauce to our liking.
