I have known potato noisettes since I was a child, thanks to a cooking encyclopedia that my mother had, about 35 years ago. This is a way of presenting potatoes that consists of small balls, ideal to accompany any main dish. They are quite elegant and striking, despite being somewhat vintage.
Currently, they sell these round potatoes precooked and made from mashed potatoes, but in this article we want to show you the original recipe for noisette potatoes. For this, we use a special spoon that is used to scoop out balls and that you can also use in fruit. Preparing these potatoes is very easy, yes, use large potatoes that allow you greater comfort to extract the balls.
A curiosity: noisette means “hazelnut”, perhaps due to its rounded shape. In addition, they are also known as Parisian potatoes. Let’s continue with the recipe and discover how to make homemade noisette potatoes step by step!
Ingredients to make Noisette Potatoes:
- 2 large potatoes
- 1 tablespoon olive oil
- 1 pinch of salt
- 1 pinch of pepper
How to make Noisette Potatoes:
Choose large potatoes, wash and peel them carefully. Now, with the special noisettes potato spoon, take out the potato balls. For this, insert it deeply and make a circular movement to extract them. Don’t worry, they won’t be perfectly round.
Once you have removed all the balls, take them to the fire with a little water and salt. As soon as it breaks the boil, calculate 3 minutes and remove them from the kitchen. Allow them to drain completely on kitchen paper.
When they are dry, fry them in a little olive oil, and salt and pepper them. Brown them a little, moving them gently from time to time. Put them back on another napkin. According to your taste, you can add a little more pepper and serve the noisette potatoes to accompany your favorite dish.
