Potato loco is a dish traditionally prepared by the native peoples of America, made with the ingredients of each region and that has been adapted to the new eras, adding new ingredients. For example, this loco, which today is part of the emblematic Ecuadorian dishes, has incorporated onion, milk and cheese, imported to the continent by European immigrants, into its original recipe. You can also serve it as a main dish to comfort yourself on a cold day and to respect the theme a bit; you can serve it in clay bowls. In addition, this type of tableware also maintains the temperature of the dish very well.
Ingredients to make Loco de papa:
- 2 large potatoes
- 400 cubic centimeters of water
- 100 cubic centimeters of milk
- 1 garlic clove
- 1 large onion
- 1 teaspoon of oil
- 1 teaspoon of nutmeg
- 1 teaspoon pepper
- 1 teaspoon cumin
How to make Potato Loco:
- To start with the loco de papa recipe, first peel 1 potato, cut it into cubes and places it in a container with water so that it does not brown while you prepare the following steps.
- Wash the second potato and cut it into small cubes. Then, take it to the air fryer at 200ºC for 12 minutes so that they are golden and crispy. If you don’t have a fryer, you can make them in the oven, fry them, or just use all the potatoes in the first step. Here we only seek to give a second very rich texture to the loco, combining the creaminess of the potatoes cooked with water and milk, with the crunchiness of the French fries.
- Peel and chop the onion to sauté it in a pot with 1 teaspoon of oil and medium heat. In this case, we use only 1 teaspoon of oil to make a healthy version, however, if you wish, you can use more oil and/or replace it with shortening.
- When the onion is transparent, add the potatoes that you had cut along with the soaking water, where there is a large part of the starch, ideal for making a creamy loco. Also add milk and seasonings.
- Tip: if you make this recipe for someone vegan or lactose intolerant, you can replace the milk with vegetable. If you are intolerant, you can also use lactose-free milk.
- When the Ecuadorian potato loco begins to boil, lower the heat to medium and cook for about 20 minutes with the pot half covered. Mash the potato to achieve a uniform texture and serve your loco with the golden potatoes

Typically, the potato soup is accompanied with a few slices of avocado or avocado, fresh cheese, and chili sauce. In addition, ingredients such as: corn, pumpkin and beans can also be incorporated into the preparation.
