In this recipe we are going to make some traditional potato blinis. Blinis are tortillas similar to crepes, generally made with flour, eggs and milk. However, this time we are going to add an additional ingredient to give it a different touch and learn how to prepare assorted blinis. We can use these small morsels as a base to prepare delicious canapés of smoked salmon, trout, herring, etc. They are ideal to consume in any type of cocktail or party.
Ingredients to make Potato Blinis:
- 300 grams of Potato for puree
- 2 units of Eggs
- 80 grams of wheat flour
- 80 milliliters of milk or cream
- 1 pinch of salt
- 1 pinch of black pepper
How to make Potato Blinis:
1.The first step to make the potato blinis recipe is to get all the ingredients ready.
2.Peel the potatoes and cut them into small squares, put them in a deep pot with enough water to cover them and cook them until they are soft to mash. Once soft, remove them from the heat.
3.Drain the potatoes and place them in a large bowl.
4.Add the wheat flour, milk cream or cream and puree these ingredients until they are very well integrated.
5.Once the previous mixture is cold, add the eggs, salt and black pepper to taste. Mix well to obtain a homogeneous blini dough.
6.Take a pan over medium heat, add a little sunflower oil and, with the help of a soup ladle, add a little of the potato blini mixture and cook on each side for approximately 2 minutes.
7.Remove the blinis from the pan when they’re done and let them cool.
8.The ideal is that with a cookie cutter you give it a round shape, but if you prefer you can cut the blinis as you like. I, for example, had a drop-shaped cutter and used it to give them a more sophisticated and elegant touch.
9.Serve the potato blinis. Remember that these tortillas are perfect to serve as a canapé, with goat cheese on top, salmon, or the preparation that you like the most. Bon Appetite!
