Potato and Pasta Salad Recipe

Try this delicious and very easy recipe for potato salad and pasta with chicken and hard-boiled egg to enjoy with the whole family at any time because it takes very little time to make and it is delicious. You will see that following the step by step its preparation is very simple but even so, it is very good!

Ingredients to make Potato and Pasta Salad:

  • 250 grams of shelled pasta (or other short pasta)
  • 1 pound of potatoes
  • 1 large chicken breast
  • 1 cube of concentrated chicken broth
  • 4 crisp lettuce leaves
  • 2 spring onions
  • 100 grams of cooked peas
  • 2 large tomatoes
  • 300 grams of mayonnaise
  • 2 squirts of eggs
  • 1 pinch of dill seeds

How to make Potato Pasta Salad:

In a large pot with 1 liter and a half of water, place the chicken that has previously been cut into small pieces, the cube of chicken stock and the diced potatoes.

Cook over medium heat and wait until the chicken and potatoes are soft and have released substance.

Add the pasta shells and eggs and wait 15 minutes until they are completely hydrated and cooked with the chicken and potato juices. You can use another type of short pasta instead of shells to make this cold potato and pasta salad if you prefer.

Trick: Remove the eggs after 10 minutes so they don’t overcook.

Once it is cooked, strain all the content and transfer it to a bowl or salad bowl with the chopped hard-boiled eggs. Add the cooked peas, sliced ​​spring onion and diced tomatoes to the potato and pasta salad. Add the mayonnaise sauce and stir the pasta and potato salad carefully so as not to crush the tubers.

Tip: Add more mayonnaise or any other sauce of your choice if you wish.

To serve it, place the crisp lettuce leaves as a bed or nest at the base of the plate. Then add all the chicken potato salad and pasta on top, sprinkle a handful of dill seeds and serve warm immediately or cold waiting a bit. As you like!

Tip: This same potato salad can also be made with tuna instead of chicken.
