A tasty, fresh and nutritious salad, perfect for the summer season because in addition to filling us up, it will help us keep fit. Cod salad is normally prepared with salted cod, a product that is easy to find throughout southern Europe, but as in this case, you can also prepare it with fresh cod.
Ingredients to make potato and cod salad:
- 2 units of Potatoes
- 250 grams of fresh cod
- 1 can of prickly pear
- 1 unit of Tomato
- 1 unit of onion
- 1 unit of Egg
- 1 handful of olives
- 2 garlic cloves
- 1 jet of oil
How to make Potato and Cod Salad:
We start by preparing all the ingredients so that we do not miss anything. We put the potatoes to cook, I have put 5 because they were small but two or three will be fine. When they are ready, let them cool. While in a bowl we are throwing the ingredients starting with the can of tuna. Then we put the olives. Chop the onion and add it to the bowl. We also cut the tomato into pieces. In a frying pan, brown the garlic with a little oil and add the cod cut into pieces to fry. Allow to cool too and add to the bowl, the boiled egg will also be minced.
Finally we will cut the potatoes into pieces and add it to the rest. Dress the potato and cod salad with a little olive oil or to taste.
