Potato and cheese casserole recipe

How to make Potato and Cheese Casserole:

  1. To start making our recipe for potato and cheese casseroles, our first step is to prepare all the ingredients for its preparation.
  2. Peel each of the potatoes and cut them into medium squares, take them to a pot with water until they are covered and a pinch of salt and cook them until they are soft to mash to make our potato casserole.
  3. Once you see that they are soft to mash, remove them and reserve them.
  4. Bring a frying pan over medium heat and add a little olive oil, once hot add the white onion in medium squares with a little salt and pepper to taste and let it fry for approximately 5 to 10 minutes.
  5. Add the sliced ​​​​chorizo ​​​​and let it brown with the onion, add garlic paste to taste, not too much so that it does not overshadow the flavor of the other ingredients. Once the mixture is ready, reserve this to be used later.
  6. Once you remove the potatoes from the water, take them to a bowl and grate half of the cheese on top.
  7. Mix well until you get a thick and very substantial puree due to the delicious flavor that this cheese gives, in this way we will be able to make our potato casserole.
  8. Add the milk cream to the puree, salt and pepper to taste.
  9. You must grease the refractories where we are going to make our potato casserole, add a little mashed potato with a spoon to the bottom of each of the casseroles; in this case I am going to make the portions completely individual.
  10. Add a little of the filling that we had reserved to each of the potato casseroles.
  11. Cover with more mashed potatoes on top of the filling that we added previously and also add the remaining Gruyere cheese on top with Parmesan cheese in this way we can gratin our potato casserole in the oven.
  12. Bake at about 160 degrees Celsius until our recipe gratins.
  13. Serve our potato and cheese casserole, in this case, decorate with some basil flowers to give our recipe a special touch and color.
