Potato and Cheese Arepas Recipe

Today we bring you another version of this delicious duo: potato and cheese arepas. This time in trio with corn. You will suck your fingers!

Ingredients to make Arepas with potatoes and cheese:

  • 600 grams of potatoes
  • 2 units of Eggs
  • 1 cup of corn flour (120 grams)
  • 300 grams of white cheese
  • 6 teaspoons of vegetable oil

How to make Potato and Cheese Arepas:

The first step to make these delicious cheap arepas is to cook the potatoes. Place a saucepan with water, wait for it to boil. Deposit the potatoes and cut in half.

Tip: If the potatoes are very large, cut them in two or four, to facilitate cooking.

When the potatoes are soft, drain the water in a colander. Turn on the faucet and run some cold water over them, just a little. Remove the shells. Take advantage of the fact that the potato is hot and mash the puree, it will be easier.

Tip: If you prefer, you can place the cheese in this step.

Prepare a puree with the potatoes. You can use a little butter or oil, using the quantities indicated at the beginning. Organize your work area, with the necessary ingredients and utensils. Chop the cheese into small squares and reserve.

Trick: You can prepare this recipe without cheese, it is just as tasty but it would no longer be a potato and cheese arepa.

Inside a bowl, deposit all the ingredients and start kneading. This is the second most important step in this straight, after the mash. Knead until there are no lumps left and you get a compact dough. I don’t use water in this recipe as the egg and oil make up for the moisture needed.

Tip: If the dough cracks, you can use a little more oil or moisten your hands with water.

When you get a smooth dough that doesn’t stick to your hands or crack, it’s ready. It’s that easy, these cheap arepas are made. Create a large ball with the dough. Divide the ball into as many potato and cheese arepas as you like. In this case, it is enough for two large or three medium arepas.

Trick: Heat the pan while you shape the arepas.

Now use your artist skills and sculpt a disc, about 1 centimeter thick. The thickness depends on your taste, they can be thin or thick arepas. Place each disk on the griddle or pan. Cook 5 minutes on each side. If you want them to be perfect, place them in the oven 1 more minute on each side or a little more.

Tip: If you complete the cooking in the oven, preheat it to 180º C.
