Ingredients to make Potato and Carrot Salad:

  • 3 potatoes
  • 1 pinch of salt
  • 3 branches of coriander
  • 1 sprig of parsley
  • 2 tablespoons of Mayonnaise
  • 1 Carrot

How to make Potato and Carrot Salad:

The first step in making this potato salad is to prepare the vegetables. To do this, wash and peel the potatoes and carrots, chop the first ones into medium pieces of about 3-4 cm. and carrots into smaller pieces. Also chop the parsley and coriander as finely as you can. Boil the vegetables for about 15 minutes in salted water until they are pre-cooked so that they do not fall apart. Remember that the water should already be boiling when you add the vegetables. Drain and set aside for about 15-20 minutes until they cool to room temperature.

After this time, place the carrot and potatoes in a bowl or salad bowl. Then add the herbs, salt and mayonnaise to taste. Stir everything so that the sauce coats everything well and let it rest in the fridge so that it takes cold, at least 20 minutes.

Serve the potato and carrot salad fresh and if you want, you can also add a little grated hard-boiled egg.
