Pork tenderloin and plantain skewers recipe

Ingredients to make Pork Tenderloin and Banana Skewers:

For 4 people

  • 2 pork tenderloins
  • 2 bananas
  • 1 red lettuce
  • 1 green lettuce
  • 2 spring onions
  • 1 tablespoon of honey
  • 1 glass of red wine
  • 1 glass of meat broth
  • 1 teaspoon of refined corn flour
  • Water
  • Hojiblanca extra virgin olive oil
  • Vinegar
  • Salt
  • Pepper
  • Parsley

How to make Pork Tenderloin and Banana Skewers:

For the sauce, chop a spring onion and fry it in a pan with a little oil. When it takes color, add the honey, the wine and the broth. Mix, season and let reduce for about 10 minutes.

Add a little refined cornmeal dissolved in water. Let cook for a couple of minutes until thick. Peel the bananas and cut them into 3 cm slices. Clean the sirloins and chop them the same size as the banana pieces.

Thread 3 pieces of meat and 2 pieces of banana onto each toothpick, alternating them. Salt and pepper them and sprinkle them with a little oil. Grill them for 4-5 minutes on each side.

Clean the lettuce, drain it, chop it and put it in a bowl. Finely chop a spring onion and add it. Season with oil, vinegar and salt.

Fluff with a couple of forks and transfer to a bowl. Serve the skewers in another source and sauce them. Decorate with a sprig of parsley.

For the grilled meat to be just right, it is necessary that the grill is very hot, and it is enough to add a few drops of oil. Proteins in the feed coagulate rapidly, thus reducing nutrient loss.
