Ingredients to make Pork stew with plums and walnuts:
- 1kg lean pork
- 2 onions
- 8 garlic cloves
- 2 cans of beer
- 1 bay leaf
- 500 grams of prunes
- 1 glass of brandy
- 250 grams of nuts
- Hojiblanca extra virgin olive oil
- Salt
- parsley
How to make Pork Stew with Plums and Walnuts:
1
Cut the meat into chunks, salt and pepper them and brown them in a pan with 4 tablespoons of oil. Remove the meat and reserve it.
2
Chop the onions, peel the garlic and leave them whole. Put everything to brown in the same pot and season. When the vegetables are golden, add the meat and the bay leaf. Pour the beer. Stew for 30 minutes over low heat.
3
Cover the plums with the brandy and peel the nuts. Put a couple of tablespoons of oil in a pan, add the nuts and sauté them. Add the walnuts macerated with the brandy and mix well. Add everything (walnuts and plums) to the stew pot and cook for 5 minutes.
4
Serve in a bowl and decorate with a sprig of parsley.
5
To present such a stew a little more gracefully, you can cook and serve it in a crock pot. If your kitchen does not accept clay for cooking, you can cook it in a conventional pot and serve it in the clay pot.
