Pork Stew Recipe

Ingredients to make Pork Stew:

  • 350g of pork rack
  • 2 tablespoons of flour
  • 1 tablespoon olive or vegetable oil
  • 1 onion, finely chopped
  • 2 minced garlic cloves
  • 2 carrots, peeled, sliced
  • 1 teaspoon ginger powder
  • 100cc of meat broth
  • 150g cup of cooked chickpeas
  • 1 teaspoon lemon juice
  • Salt
  • pepper-to-taste

How to make Pork Stew:

  1. Flour the meat.
  2. In a 30 cm Teflon pans.
  3. Heat the oil over high heat.
  4. Put the meat in one layer and cook for 5 minutes until browned on all sides.
  5. Scoop it out with a slotted spoon and put it in a bowl on paper towels.
  6. Reduce heat to moderate.
  7. Add onion and garlic to skillet and cook, stirring frequently, for 5 minutes until onion softens.
  8. Add carrots, ginger, salt, pepper and stock and bring to a boil.
  9. Lower the flame, add the meat, cover and simmer for 1 hour 15 minutes until the meat is tender.
  10. Add the chickpeas and cook for a further 5 minutes until heated through.

  12. Add the lemon juice.
  13. Accompany with natural boiled potatoes.
