Ingredients to make Pork Stew:
- 350g of pork rack
- 2 tablespoons of flour
- 1 tablespoon olive or vegetable oil
- 1 onion, finely chopped
- 2 minced garlic cloves
- 2 carrots, peeled, sliced
- 1 teaspoon ginger powder
- 100cc of meat broth
- 150g cup of cooked chickpeas
- 1 teaspoon lemon juice
- Salt
- pepper-to-taste
How to make Pork Stew:
- Flour the meat.
- In a 30 cm Teflon pans.
- Heat the oil over high heat.
- Put the meat in one layer and cook for 5 minutes until browned on all sides.
- Scoop it out with a slotted spoon and put it in a bowl on paper towels.
- Reduce heat to moderate.
- Add onion and garlic to skillet and cook, stirring frequently, for 5 minutes until onion softens.
- Add carrots, ginger, salt, pepper and stock and bring to a boil.
- Lower the flame, add the meat, cover and simmer for 1 hour 15 minutes until the meat is tender.
- Add the chickpeas and cook for a further 5 minutes until heated through.
- Raise
- Add the lemon juice.
- Accompany with natural boiled potatoes.
