Ingredients to make Macaroni with Pork Rib:
- 500 gr. of macaroni
- 400 gr. chopped pork rib
- 100 gr. chopped lean bacon
- 1/2 dl. of olive oil
- 1 clove garlic
- 1 glass of Madeira wine or brandy
- 1 sprig of rosemary
- 1/2 teaspoon fennel seed
- 1 bay leaf
- salted
- Pepper
How to make Pork Rib Macaroni:
- In a casserole, fry the ribs and bacon in oil, rubbed with rosemary, bay leaf, fennel and whole garlic.
- Remove the garlic when golden and the bay leaf.
- Season with salt and pepper and drizzle with the wine or brandy.
- Complete cooking over moderate heat.
- Cook the pasta al dente and drain it.
- Place it in a bowl and season with the prepared stew.
- Serve grated cheese separately.
