Ingredients to make Sinaloa Style Pork Beans:

  • 1 kilogram of red beans
  • 1 pinch of salt and pepper
  • ½ kilogram of Chorizo
  • ½ kilogram of Chihuahua cheese
  • ¼ kilogram of Bacon
  • 4 pieces of green chili
  • 1 tablespoon of hot sauce
  • 1 cup of vegetable oil
  • 1 clove garlic
  • ½ piece of Onion

How to make Sinaloa Style Pork Beans:

1.We will start preparing our Sinaloa style pork beans by cooking the red beans in a pot with enough water, when the beans are soft or semi-cooked you can add onion, garlic and salt to taste to season.

2.Once they are done, blend the beans together with a little of the same cooking juice until you get a fairly thick cream. Fry this cream in a saucepan with a quarter cup of hot oil, stirring constantly, until the beans are quite dry and easily detach from the pot. At this point remove from heat and reserve.

3.On the other hand, chop the chorizo and bacon into cubes, as well as the green chili into not very thick slices.

4.In a large saucepan, add a little more oil, and once it is hot, fry the previously chopped chorizo and bacon.

5.We also add the chills, but do not be scared that they will not bite almost anything; only the light flavor will remain. We let the chilies fry until we see that the oil has taken on the flavor of the chili, this will take about three to four minutes.

Tip: Remember that adding spiciness is totally optional and to taste, so you can add more or omit them completely, depending on the level of spiciness you want in your dish.

6.When everything is well fried, we add the bean paste that we had reserved and integrate perfectly. Don’t forget to stir constantly to prevent the pork beans from sticking to the pan.

7.Finally, when the beans begin to boil, rectify the seasoning and add the grated cheese to melt.

8.Remove the Sinaloa-style pork beans from the heat and serve as a side to meats or to eat alone with tortilla chips, nachos or corn tortillas.
